Can you even imagine an Indian festival without a sweet dish? Indians believe that the consumption of sweets before commencing a new job or beginning of a festival brings prosperity and good luck. What can be better than Kheer in this auspicious festival? Let us look at the procedures:
- Rinse and soak govindbhog rice/ sonachur rice for about an hour.
- Meanwhile, bring the milk to a boil, and in a small bowl, take 4-5 teaspoons of boiling milk and add a few strands of Kesar or saffron to it.
- Add the soaked rice to the boiling milk, with the water completely drained.
- Simmer and cook the rice on low flame, adding sugar according to your taste.
- Cook until the Kheer acquires a thick consistency, adding the saffron solution to give it the flavor and aroma.
- Serve chilled, garnished with pistachios and almonds.
2. Coconut Barfi
Aren’t Coconut barfis a bliss in diamond shapes? Let us look at how it is made.
- Take unsweetened desiccated coconut in a cup of warm milk and mix it to soak for about 1 hour.
- In a pan, add 2 tablespoons of clarified butter and then add the desiccated coconut soaked in milk.
- Stir it continuously, making sure it doesn’t get burned.
- Now add condensed milk to it, and stir it again.
- Continue to cook it until the mixture loses most of its moisture.
- Before the mixture gets completely cooled down, transfer the contents to a greased plate and let it set.
- Once the mixture cools down completely, cut into desired shapes.
3. Gajar Ka Halwa
Nothing can come close to gajar halwa in terms of taste and texture. Although it takes a little bit more effort to grate carrots, all the effort is worth it when the dish is ready.
- Rinse and peel 6-7 carrots and grate them.
- In a heavy kadhai, add all the grated carrots and add 1 litre of milk.
- Keep stirring until the mixture becomes half.
- Add sugar according to your taste and cook for a little more time.
- The next step is to add 2 teaspoons of clarified butter with some cardamom powder to give it a good aroma.
- Mix it well and add chopped almonds and pistachios to it.
- Served it hot or cold. Both ways, it tastes good.
4. Chole Bhature
Savories also form an integral part of Indian festivals. Chole Bhature originated in Punjab and is enjoyed by people from all over the country.
- For chole, soak chickpeas overnight after rinsing them completely with water.
- Next morning, pressure cook the chickpeas and meanwhile make a paste of tomatoes, garlic, ginger, cloves, and chilies in a grinder.
- In a pan, add mustard oil, cumin seeds, bay leaf, cinnamon stick, and the paste, and keep stirring.
- Add the required amount of water so that the paste doesn’t get burned.
- Stirring it continuously, add dry spices to it like amchur powder, garam masala, and hing powder.
- Sauté it until it gets to a thick consistency and add chickpeas to it.
- Add water and salt according to the requirement.
- Cook for a few more minutes and serve with hot and puffy bhaturas.
5. Paneer Tikka
Paneer tikkas are one of the most enjoyed snacks at every festival. It is easy to prepare and takes less time as compared to other dishes.
- Dice one medium-sized capsicum and onion and cut them into a square shape.
- Crush garlic and one small-sized ginger in a pestle.
- To prepare the marinade, add yogurt, red chili powder, coriander powder, turmeric powder, garam masala powder, and chaat masala.
- Slice 250gms of paneer into cubes and add it to the marinade for 15 minutes.
- You can add lemon juice to the marinade, and then add capsicum and onions and marinate all of them properly so that they get an even coating.
- Assemble them alternately on skewers and grill them evenly.
- Serve it with green chutney, and enjoy.
